Dragon Tongue is a unique, multi-purpose Dutch heirloom. This horticultural type bean is suited for harvest as a fresh snap bean or as a shelled bean at maturity. As a snap bean, harvest when the flat, 6 to 8 inch beans turn from lime green to a buff yellow with bright purple stripes. At this stage, the stringless pods are extremely crisp, juicy and sweet.
